The name of Boston Butt can be confusing, as it comes from the upper shoulder of the pig. This motion-driving muscle is marbled throughout and has some fat and gristle–which is exactly why it’s a favorite cut in pulled pork dishes, as it becomes deliciously pull-apart tender and juicy with slow cooking.
