Use a mortar and pestle to mash coarse salt, garlic, and rosemary needles into a paste, and then rub this mouth-watering salve all over the pork. Roast the pork until you reach the desired temperature, take it out to sit until it cools, then crank the oven and sear to develop a crackling brown crust.

Add some of LaCombe’s Bayou Burn Chile Flakes (coming soon) to your herb rub to add extra depth and some heat!
