The brisket is the animal’s breast, driving movement as the cattle roam far and wide. This can mean a tougher cut of meat, but when cooked right it results in some of people’s favorite meals–whether brined and boiled for Corned Beef, or cooked low and slow on the grill or in the slow cooker.
