The bottom half of the leg, ham hocks contain bones, collagen, connective tissues, and some meat all surrounded by a band of fat and skin. While not typically enjoyed on their own, they can be added to various dishes for a boost in nutrition and flavor, whether you add them to a bone broth or spice and roast or smoke them before adding to a soup or casserole for a concentrated bacon-y flavor.
