Marinate these ribs overnight in a deep roasting pan. Bring them to room temperature, add water to the pan, cover tightly with foil, and roast in a hot oven until the meat is very tender, but not quite falling off the bone. Remove the foil and finish in the oven until the ribs are nicely browned.
